Ingredients:

  • a breakfast bread pudding
  • 8 eggs
  • 3 cups milk
  • 1 large or 2 small apples
  • 1 tbsp vanilla
  • 1 tbsp cinnamon
  • 1 tbsp sugar
  • 1/2 stick butter or margarine

Directions:

  1. Preheat oven to 350 degrees.
  2. Peel, core and chop the apple(s) and place in microwave save bowl. Add sugar and cinnamon to the apples and mix. Microwave until they reach a stewed consistency, about a minute and a half. Set aside.
  3. Beat eggs in large mixing bowl, slowly adding the milk and vanilla. Cut bread into small cubes and mix into the egg mixture, stir until all the bread is moistened by the liquid. Add the apple mixture and stir well.
  4. Grease a 9 x 13 pan, pour mixture in the pan then scatter pats of butter on the top. Bake in 350 degree oven for 40 - 45 minutes.
  5. Cut in squares and place on plate. Sprinkle with Confectionary Sugar just prior to serving. Serve with warm maple syrup on the side for those with an extra sweet tooth.
