Hot Potato Salad

Ingredients:

  • 5 slices bacon, diced and cooked until crisp
  • 2 tbsp bacon drippings
  • 1 1/2 tbsp flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tbsp mustard
  • 1/2 cup cider vinegar
  • 1/2 cup water

Directions:

  1. Cook bacon and set aside on paper towel to drain.
  2. Heat bacon drippings and blend in flour, sugar, salt and mustard.
  3. Gradually add vinegar and water, stirring constantly until smooth.
  4. Continue cooking over low heat, stirring, until thickened.
  5. Add potatoes, mix gently and heat through.
  6. Sprinkle with bacon.
