Ingredients:

  1. Soak the chick peas overnight.
  2. Drain the water, and boil the chick peas for about 15 - 20 minutes.
  3. After boiling, run cold water through the chick peas and set aside for 30 minutes, put salt all over the chick peas so that there would be a 'base' taste.
  4. [Note: I use a mortar and pestle for my Chunky hummus preparation] Place the chick peas in a bowl and add the Ground Cumin, Paprika, Cayenne pepper, Black pepper, Lemon/Lime. Make sure you oil up the chick peas with Olive oil. Don't put too much oil, because when mashing the chick peas, it will merely soak up the oil.
  5. Now all you do is, mash the chick peas! Don't forget that my measurements are of minimal amounts and it varies. So keep on taking a taste and see if you are suited with the taste!
  6. Most importantly is Ground Cumin, Paprika, salt and black pepper.
  7. Add water bit by bit to keep the mixture moist, and when the mixture seems well-mashed yet with chunky bits, it is ready!
  8. Store in the refrigerator and when serving, add a drizzle of olive oil and a tad of paprika on top of the hummus portion.
  9. Best served with toasted pitta bread, or any bread is great.
