Ingredients:

  • 1 tbsp olive oil
  • 2 zucchini , halved lengthwise
  • 2 yellow squash , halved lengthwise
  • 1 large red onion , cut into 4 slices
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • cooking spray

Directions:

  1. Prepare grill.
  2. Drizzle oil evenly over vegetables; sprinkle with salt and pepper.
  3. Place vegetables on grill rack coated with cooking spray. Grill zucchini and squash 2 minutes on each side or until tender. Grill onion, uncovered, 5 minutes on each side or until tender.
