Green Tomato Sweet Relish

Ingredients:

  • 8 quarts green tomatoes
  • 1/2 cup salt
  • 1 bunch celery
  • 2 tbsp celery seeds
  • 6 cups sugar
  • 9 whole cloves
  • 1 quart vinegar , plus
  • 1 pint vinegar
  • 1 pint water

Directions:

  1. Grind the tomatoes, onions, and peppers fine. Sprinkle the salt as you grind the tomatoes.
  2. Let stand about 1 hour so salt can go through the tomatoes.
  3. Let drain overnight.
  4. The next morning.Put all spices in a bag and add the bag and the sugar to the vinegar and water.
  5. Bring to a boil.
  6. Let boil for 7 minutes.
  7. Add the tomato mixture.
  8. Let boil 5 minutes.
  9. Turn the heat to low (don't over boil).
  10. Turn off heat if it seems to be getting too soft.
  11. Put in sterilized jars and seal.
