Ingredients:

  • 1/8 tsp baking soda
  • 1/2 stick butter
  • 1 1/2 cup pecan meats
  • 1 dash(es) salt
  • 1 cup sweet milk
  • 1/2 tsp vanilla

Directions:

  1. In a 2 quart sauce pan, mix 2 cups sugar and 1 cup milk and slowly bring to a boil. Keep boiling slowly while you carmelize 1 cup sugar in a #5 iron skillet. Be careful and don't let sugar burn; stir continually after you see it start to melt. When all the sugar has melted (if it isn't all melted, the candy will be grainy), remove saucepan from the burner and slowly pour the caramelized sugar into the saucepan mixture stirring (with wooden spoon) in a figure 8, until skillet is empty. Return saucepan to burner and continue stirring constantly, being careful not to splash candy onto sides of the pan, until the mixture tests a firm ball in cold water (firm ball stage, 250- 255).
  2. Remove pan from heat and stir in soda, stirring until it foams well and is thoroughly mixed. Then add butter and let mixture stand for about 30 minutes. Add vanilla and a dash of salt.
  3. With electric mixer beat until the mixture begins to get real thick. Begin beating with the wooden spoon and add pecan meats and continue beating until it almost sets in the pan, then pour into a pan that has been lined with waxed paper and hope for the best!
