Directions:

  1. Mix sugar, butter, coconut, vanilla, and egg together. Stir in remaining ingredients. Shape dough by rounded teaspoonfuls into balls. Place on ungreased baking sheet 3 inches apart. Flatten cookies to 2 inches in diameter with a glass dipped in sugar. Bake at 350° until cookies are set (about 7 to 9 minutes). Cookies will be pale in color. Cool slightly. Remove from baking sheet and store tightly covered.
