  1. Pour the Lima beans into a pot of your choice. Rinse and get all the broken and bad pieces out, drain then add ham hocks and enough water to cover the beans and the meat. Set the stove top setting on medium high. Let beans come to a boil and then add the seasonings, and the onions and bell pepper. Continue to let boil for another 5-8 minutes then bring the setting down to medium heat. Let cook now for about 30 minutes add water if need to but not too much just enough to cover the beans not drown them with too much water.
  2. By now the water has turn into bean liquor and now add the butter and the sugar, turn the heat down to low and let the gravy develop.
