Gluten Free Buttermilk Biscuits

Ingredients:

  • 1/2 cup of potato starch
  • 3/4 cup of buttermilk
  • 1 3/4 tsp xanthan gum
  • 1/4 tsp of baking soda
  • 1 tbsp of sugar
  • 1/2 tsp salt
  • 3/4 cup of cornstarch
  • 1 tbsp of baking powder

Directions:

  1. Preheat your oven to 375°F
  2. Spray the baking sheet or cupcake pan
  3. Place the starches, baking powder,xanthan gum, baking soda, salt, and sugar into the bowl of a food processor.
  4. Process for about 5-10 seconds.
  5. Sprinkle the butter cubes over the flour mixture
  6. Process for 10-15 seconds.
  7. The mixture should lokk like coarse crumbs.
  8. Pour the buttermilk over the mixture.
  9. Process that for 8-10 seconds or until the dough is a moist clump.
  10. Now take your hands or a spoon and put it onyour cookie sheet or in the muffin pan.
  11. Then cook till lightly browned or say about 10-15 minutes.
