Garlicky Pan-roasted Chicken

Ingredients:

Directions:

  1. Preheat oven to 375 degrees.
  2. In medium glass or enamel baking pan mix garlic, lemon juice and Worcestershire with 1/2 cup water. Add butter and both the black and cayenne pepper and half the parsley.
  3. Cross hatch the tops of the chicken with 4 slashes, about 1/4 inch deep. Place chicken, scored side down, in pan and spoon the sauce over.
  4. Bake, uncovered, 20 minutes. Remove from oven and stir in remaining parsley.
  5. Serve chicken with a spoonful (or two) of sauce over the top.
