Garlicky Pan-roasted Chicken |

Easy baked chicken dish. You will have all the ingredients on hand already. Can be marinated or made on the spot - both are good. Vaguely Greek-like so we like it with oven roasted potatoes and a Greek salad. Ingredients:
2 teaspoons minced garlic |
6 tablespoons lemon juice |
6 tablespoons worcestershire sauce |
1/4 cup melted butter (can substitute olive oil) |
3/4 teaspoon black pepper |
pinch of cayenne pepper |
1/3 cup minced parsley |
4-6 skinned and boned chicken breast halves |
Directions:
1. Preheat oven to 375 degrees. 2. In medium glass or enamel baking pan mix garlic, lemon juice and Worcestershire with 1/2 cup water. Add butter and both the black and cayenne pepper and half the parsley. 3. Cross hatch the tops of the chicken with 4 slashes, about 1/4 inch deep. Place chicken, scored side down, in pan and spoon the sauce over. 4. Bake, uncovered, 20 minutes. Remove from oven and stir in remaining parsley. 5. Serve chicken with a spoonful (or two) of sauce over the top. |
