Fried Corn off the Cob

Ingredients:

Directions:

  1. Remove corn from the cob using a sharp knife.
  2. Chop red bell pepper and green onion tops.
  3. Melt butter in large frying pan.
  4. Add all ingredients to hot pan.
  5. Stir fry over high heat for 5-6 minutes.
  6. Do not overcook. Do not saute! Veggies should be crisp.
