Fresh Tomato Basil Pasta Sauce

Ingredients:

  • 4 raw tomatoes (medium to large)
  • 1/3 cup olive oil
  • 1 tbsp sugar
  • 2 cups fresh basil
  • pine nuts (optional)
  • 1/4 cup olive oil

Directions:

  1. Puree tomatoes with olive oil, butter, balsamic vinegar, garlic, salt and pepper, and sugar. Set aside.
  2. Separately, puree the fresh basil, olive oil, and pine nuts.
  3. We use either farfalle, rigatoni, or penne pasta.
  4. Stir two mixtures together. See optional toppings below:.
  5. Crumbled goat cheese.
  6. Fresh grated parmesean.
  7. Toasted pine nuts, walnuts or pecans.
  8. Italian turkey sausage, shrimp, or grilled chicken.
