Fresh Corn and Avocado Salad

Ingredients:

Directions:

  1. Put fresh corn in a large pot of water and boil until cooked. Drain and let cool.
  2. Finely chop garlic and onions. Place in medium size bowl. Add lime juice (squeeze 3-4 limes) and mix.
  3. Now peel ripe avocados, place in bowl with garlic, onion and lime, and mash until soft and mixed thoroughly.
  4. Take fresh cooked corn and remove kernels. Add to avocado mixture.
  5. Chop celery (about 3 sticks) and red pepper. Add to salad.
  6. Chop or crush cashews into medium size pieces.
  7. Mix altogether. Add salt and pepper to taste.
  8. Let chill for one hour.
