Fresh Corn and Avocado Salad |

Great Summer Salad! Goes well with something spicy like Chili. Cashews can be replaced with walnuts if preferred, but salad can also be served without nuts at all. Ingredients:
3 ripe avocados |
1 red onion |
5 cloves garlic |
5 ears fresh corn |
1/2 cup chopped celery |
1 red pepper |
1 cup raw cashews |
1/4 cup lime juice |
Directions:
1. Put fresh corn in a large pot of water and boil until cooked. Drain and let cool. 2. Finely chop garlic and onions. Place in medium size bowl. Add lime juice (squeeze 3-4 limes) and mix. 3. Now peel ripe avocados, place in bowl with garlic, onion and lime, and mash until soft and mixed thoroughly. 4. Take fresh cooked corn and remove kernels. Add to avocado mixture. 5. Chop celery (about 3 sticks) and red pepper. Add to salad. 6. Chop or crush cashews into medium size pieces. 7. Mix altogether. Add salt and pepper to taste. 8. Let chill for one hour. |
