Ingredients:

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 tsp vanilla
  • 3 cups flour
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1 1/2 tsp cinnamon
  • 3/4 tsp nutmeg
  • 1 cup nuts
  • 1 cup raisins

Directions:

  1. Beat eggs until thick & foamy, add oil, sugar & vanilla & mix. add zucchini & pineapple mix well. Separately mix flour baking soda, baking powder, salt, cinnamon, & nutmeg, Add to wet mixture. Stir in nuts & raisins. Pour into 2 greased & floured pans and bake at 350 degree oven for 1 hour or until golden brown.
