3 eggs |
1 cup oil |
2 cups sugar |
2 teaspoons vanilla |
2 cups shredded zucchini |
8 1/2 ounces crushed pineapple, drained |
3 cups flour |
2 teaspoons baking soda |
1/2 teaspoon baking powder |
1 teaspoon salt |
1 1/2 teaspoons cinnamon |
3/4 teaspoon nutmeg |
1 cup nuts |
1 cup raisins |
Directions:
1. Beat eggs until thick & foamy, add oil, sugar & vanilla & mix. add zucchini & pineapple mix well. Separately mix flour baking soda, baking powder, salt, cinnamon, & nutmeg, Add to wet mixture. Stir in nuts & raisins. Pour into 2 greased & floured pans and bake at 350 degree oven for 1 hour or until golden brown. |
