Ingredients:

  • 2 cups water
  • 1 (1 3/4 oz) box pectin
  • 5 cups sugar

Directions:

  1. In a sauce pan simmer the elderberries in the water until berries are soft.
  2. Strain through a cloth.
  3. Be sure you have 31/2 cups of juice; if not, pour a little water through the crushed berries.
  4. Return the 31/2 cups juice to pan.
  5. Add pectin to the juice and bring to a boil.
  6. Stir in the sugar and bring to a full rolling boil.
  7. Boil for 1 minute.
  8. Remove from heat, skim and pour into hot sterilized jars.
  9. Seal with hot paraffin immediately.
