Eggplant Fry

Ingredients:

  • 2 long slender green eggplant - sliced and soaked in water for 15 mins , then drained
  • 1 tsp chilli pwd
  • 1 tsp meat pwd ( optional )
  • salt if needed .

Directions:

  1. Stir fry the eggplant slices on high heat for 2 mins .
  2. Turn the heat to medium and continue to stirfry .
  3. Once almost done add the spices and fry .
  4. When done , add the vinegar , mix well .
  5. Check the salt and remove .
