Owing to its versatile nature and wide use , brinjal / eggplant is described as the 'King of Vegetables' . Ingredients:
2 long slender green eggplant - sliced and soaked in water for 15 mins , then drained |
1 tsp chilli pwd |
1 tsp meat pwd ( optional ) |
1 tbsp white vinegar |
salt if needed . |
Directions:
1. Stir fry the eggplant slices on high heat for 2 mins . 2. Turn the heat to medium and continue to stirfry . 3. Once almost done add the spices and fry . 4. When done , add the vinegar , mix well . 5. Check the salt and remove . |
