Eazy Peezy Extra Yummy Fruitcake

Ingredients:

  • 150 g margarine
  • 250 ml sugar (1 cup)
  • 250 ml water (1 cup)
  • 10 ml baking soda (2 tsp)
  • 500 ml cake flour (2 cups)
  • 3 ml baking powder (3 quater of a tsp)
  • 1 ml salt (pinch)
  • 2 ml ginger
  • 90 ml brandy
  • exta brandy
  • 50 ml syrup

Directions:

  1. Mix raisins, dates, margarine, sugar and water.
  2. Cook for 5 minutes on high in microwave.
  3. Mix in the baking soda.
  4. Let it cool down.
  5. Sift the flour, baking powder, salt and ginger together.
  6. Mix into the above mixture.
  7. Mix in the eggs, cherries, nuts and brandy.
  8. Grease a microwave cake bowl.
  9. Pour the mixture into the microwave cake bowl.
  10. Microwave on high for about 16 to 20 minutes.
  11. Turn out on wax paper.
  12. Cover.
  13. Let stand for 30 minutes.
  14. Pour some extra brandy over to taste.
  15. Serve hot or cold.
  16. Freezes very well.
