Ingredients:

  • 1 medium onion, sliced
  • 2 tsp salt
  • 1/2 cup heavy cream
  • 2 tbsp vinegar
  • 1/4 tsp salt
  • 1/8 tsp pepper

Directions:

  1. In a large bowl, combine cucumbers, onion, and salt. Let stand at room temperature about 1 hour.
  2. Drain well.
  3. Combine cream, vinegar, salt and pepper, add to cucumber/onion mixture, and stir.
  4. Chill several hours before serving.
