Creamy Orange Tapioca With Pears

Ingredients:

  • 1 egg
  • 1/3 cup sugar
  • 1/8 tsp salt
  • 1 1/2 cups milk
  • 1 cup whipping cream , whipped
  • 1 tsp vanilla
  • poached pear ingredients
  • 1 cup sugar
  • 1 cup water
  • 2 tbsp lemon juice
  • 2 tsp vanilla
  • 3 large pears

Directions:

  1. Combine egg, sugar and salt in a saucepan.
  2. Beat them together with a wooden spoon until blended.
  3. Stir in milk, tapioca and orange rind.
  4. Let stand t minutes.
  5. Set over moderate heat and cook until mixture comes to a full rolling boil, stirring constantly.
  6. Turn down heat and continue cooking and stirring 1 minute more. Remove from heat and cool.
  7. Whip cream and fold into tapioca mixture along with vanilla.
  8. Pour into bowl and chill well.
  9. Spoon chilled mixture into sherbert glasses at serving time. top each serving with a poached pear half and sprinkle with toasted almonds.
  10. Poached Pears
  11. Combine sugar and water in saucepan and bring to a boil.
  12. Add lemon juice and vanilla.
  13. Peel pears and cut in half.
  14. Remove stems and seeds.
  15. Drop into the boiling sugar syrup and simmer 3 minutes or until just beginning to get tender.
  16. Cool in syrup and chill well.
  17. Lift out of syrup with a slotted spoon and use as directed.
