Creamy Gluten-Free Polenta

Ingredients:

  • 1/2 cup water
  • 4 -5 tbsp pure gluten-free cornmeal
  • 1 pinch salt
  • 1 -2 tbsp grated zucchini or 1 -2 tbsp grated carrots or 1 -2 tbsp minced garlic

Directions:

  1. Heat water to boiling in a saucepan.
  2. Gradually whisk in cornmeal and salt.
  3. Reduce heat and simmer, whisking constantly until thickened (about 10 minutes).
  4. Season to taste with pepper.
  5. Enjoy!
