Cranberry Goat Cheese Log

Ingredients:

  • 1/4 oz package gelatin
  • 1/4 cup water
  • 12 oz package fresh cranberries
  • 1/2 tsp cinnnamom
  • 11/2 cup sugar
  • 1/4 cup raspberry or orange liquer

Directions:

  1. Dissolve gelatin in water and set aside
  2. In saucpan combine cranberries, juice, liquer, cinnamon and sugar
  3. Bring to a boil and cook 10 mins.
  4. Add the dissolved gelatin and cook and boil until mixture resembles a thick jelly or compote
  5. Remove from heat, place pan over a bowl of ice water to cool mixture down
  6. Once cool, lay an 18 inch piece of plastic wrap on the counter
  7. Spoon about 1/2 cup of sauce into an even rectangle, slightly longer than the goat cheese log
  8. Place goat cheese log on top of sauce
  9. Spoon remaining cranberry mixture over goat cheese log
  10. Gently wrap up the log, using plastic to mold the sauce around the cheese
  11. Twists ends closed tightly
  12. Freeze about 30 mins to set mixture the cranberry mixture
  13. Remove from the freezer and gently remove plastic
  14. Use string or plain dental floss or a serated knife to cut into rounds and place on serving platter
  15. Serve with crackers or toasted pita bread
