Ingredients:

  • 1/3 cup sugar
  • 1 tsp cinnamon
  • 1/4 cup orange juice
  • 2 pints vanilla or 2 pints chocolate ice cream
  • 1 small wafer cookies

Directions:

  1. Use fresh or frozen cranberries.
  2. In a large saucepan, combine cranberries, marmalade, sugar, cinnamon, and orange juice, bring mixture to a boil, reduce heat to low simmer, uncovered 8-10 minutes or until cranberries burst and mixture is syrupy.
  3. Place 2 scoops ( 1/3 c each) ice cream into each dessert glass or bowl, spoon warm cranberry mixture over ice cream.
  4. Garnish with small cookies and fresh mint leaves, if desired.
