Ingredients:

Directions:

  1. In the microwave, cook veggies 2-3 minutes on high, or until cooked.
  2. In the top of a double boiler, melt butter and flour together.
  3. Cook for 3-4 minutes to create a blond roux.
  4. Stir in veggies, season with salt and pepper.
  5. Cook for 2 minutes.
  6. Whisk in the milk.
  7. Bring the liquid up to a boil and reduce to a simmer.
  8. Simmer for 15 minutes.
  9. Stir in the crab meat, continue simmering for 15 minutes.
  10. Sprinkle chopped eggs in the bottom of soup bowl. Ladle soup into bowl. garnish with chopped parsley.
  11. Enjoy
