Ingredients:

Directions:

  1. Melt butter & cook onions until soft, but not brown. Stir in flour & cook, stirring, for 5 minutes over medium-low heat (to get rid of raw taste).
  2. Cool slightly & whisk in milk. Bring to a boil. Add potatoes, thyme, salt and pepper. Lower heat, cover & simmer for 20 minutes (until potatoes are tender).
  3. Add clams with juice & heat through. Do NOT boil. Taste & adjust seasoning (if necessary).
  4. Serve & garnish with bacon, croutons & green onions.
