This recipe originally came from the Milk calendar. It's very good, especially with the garnish. Ingredients:
1/4 cup butter |
2 onions, finely chopped |
1/4 cup flour |
4 cups milk |
3 medium potatoes, peeled & diced |
1 teaspoon thyme |
1/4 teaspoon salt (or more to taste) |
1/4 teaspoon pepper |
2 (5 ounce) cans clams (with juice) |
3 slices bacon, cooked crisp |
1/2 cup crouton (sourdough are really good) |
3 green onions, chopped |
Directions:
1. Melt butter & cook onions until soft, but not brown. Stir in flour & cook, stirring, for 5 minutes over medium-low heat (to get rid of raw taste). 2. Cool slightly & whisk in milk. Bring to a boil. Add potatoes, thyme, salt and pepper. Lower heat, cover & simmer for 20 minutes (until potatoes are tender). 3. Add clams with juice & heat through. Do NOT boil. Taste & adjust seasoning (if necessary). 4. Serve & garnish with bacon, croutons & green onions. |
