Cinnamon Raisin Pinwheels

Ingredients:

  • 2 cups flour
  • 1 tsp. salt
  • 1/2 cup shortening
  • 1 cup milk
  • 1/3 cup butter or more if desired
  • 3/4 cup brown sugar
  • 1 tbsp. cinnamon
  • 1/2 cup raisins

Directions:

  1. Preheat oven 425. Grease 12 muffin cups.
  2. In a large bowl combine flour, baking powder and salt. Cut in shortening.
  3. Addmilk all at once and stir with fork until soft dough is formed.
  4. Turn dough out onto lightly floured surface and knead gently 8-10 times.
  5. Roll out to 12 inch square.
  6. Gently spread butter over dough.
  7. Combine brown sugar, cinnamon and raisins.
  8. Sprinkle evenly on dough.
  9. Roll up dough like a jelly roll. Seal edges.
  10. Cut into 12, 1 inch thick pieces.
  11. Place in muffin cups.
  12. Bake 14-18 min.
