Ingredients:

  • 1 cup canola oil
  • 3 eggs
  • 2 tsp vanilla
  • 3 cup flour
  • 2 cup sugar
  • 1/2 cup cocoa powder
  • 1 tsp each baking soda
  • 1/2 cup cocoa
  • enough milk to form a thick glaze

Directions:

  1. In a blender mix the zucchini, oil, eggs,and vanilla
  2. In separate bowl combine flour, sugar, cocoa, baking powder and baking soda.
  3. Pour wet ingredients into dry, stir to mix.
  4. Pour into 2 greased 9x5 loaf pans.
  5. Bake at 325 for 50-60 minutes. Remove to rack to cool.
  6. Glaze when cooled.
