  3. Blend cheese and sugar until smooth. Add remaining ingredients.

  6. Cut off the tops: about half an inch
  7. Clean out seeds and ribs if there are any
  8. Put ricotta filling in pastry bag
  9. Pipe into chilis
  10. With a little puff on top

  12. Plate in a circle with thick ends pointing out

  14. In center of plate put a deep bowl with the chocolate fudge(hot or cold)
  15. Dip each chile in fudge return to plate and serve. OR let each person dip their own.
