Chocolate Chip-Applesauce Banana Bran Muffins

Ingredients:

  • 1/2 cup skim milk
  • 1/2 cup water
  • 2 tbsp vinegar
  • 1 1/2 cup bran flakes
  • 1 cup flour
  • 1/4 cup brown sugar
  • 1 (large) banana
  • 3 1/2 egg whites

Directions:

  1. Combine milk, water and vinegar.
  2. Mix in all bran. Let sit.
  3. Mix together all dry ingredients in separate bowl.
  4. Add 1 mashed banana, 3 egg whites and applesauce to bran mixture.
  5. Add dry ingredients to bran mixture and mix with spoon.
  6. Fold in chocolate chips.
  7. Spritz muffin tins with Pam
  8. Bake at 375º for 21-25 minutes.
