Chipotle Honey Roasted Peanuts

Ingredients:

  • 1 lb. peanuts , no skins
  • 2 tbsp. butter
  • 2 tbsp. honey
  • 1 tsp. kosher salt
  • 1/2 tbsp. chipotle powder
  • 1/4 tsp. garlic powder
  • 1/4 tsp. chili powder
  • 1/3 cup sugar

Directions:

  1. Preheat oven to 325°.
  2. In pan large enough to mix nuts melt butter, honey and salt. Add nuts and stir to coat.
  3. Transfer to 13 x 9 cake pan. Bake at 325 for 20 to 25 minutes. Stirring occasionally.
  4. Make a cure of sugar and spices.
  5. When nuts are done stir in the cure and shake or stir every few minutes to break clumps (I do this in a large bowl with a lid so I can shake).
  6. Store in a quart mason jar, or other air tight container.
