Chilled Salmon With Pasta and Asparagus

Ingredients:

  • 1 tbsp olive oil
  • 8 (4 oz) salmon fillets
  • 2 cups frozen asparagus, thawed and cut into 1-inch pieces (or fresh asparagus steamed until crisp-tender, cut into 1-inch pieces)
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 tbsp fresh dill
  • 1/4 tsp salt

Directions:

  1. Cook pasta according to package directions, but do not add salt. Drain pasta in a colander. Place pasta in large bowl; toss with oil. Cool to room temperature.
  2. In a large skillet, place salmon in enough water to cover. Add lemon slices and bay leaf. Cook salmon over medium heat until opaque and fish flakes easily with a fork, 15 minutes. Place salmon on a plate, reserving 1/4 cup of poaching liquid. Cover with plastic wrap; chill completely.
  3. Meanwhile, prepare dressing. In a small bowl, combine mayonnaise, sour cream, reserved poaching liquid, lemon juice, dill and salt.
  4. Combine pasta, asparagus and 1 cup of dressing. Toss to coat. Spoon pasta mixture onto serving plates. Place salmon on top of pasta. Spoon remaining dressing over salmon. Serve immediately.
