Chicken Breast With Kiwi

Ingredients:

Directions:

  1. In large saucepan bring chicken broth to boil.
  2. Add chicken breasts & simmer 10 minutes, skimming off any scum that rises to top.
  3. Add celery & leek & simmer another 10 minutes.
  4. Remove chicken from broth & keep warm [Broth can be strained & reserved for some other use.].
  5. Arrange kiwifruit in fan-shaped pattern on serving dish.
  6. Zest half of orange & sprinkle over kiwifruit.
  7. Juice orange & lemon into small bowl.
  8. Heat butter in small saucepan & add sugar, stirring until sugar is melted & begins to turn dark, about 5 minutes.
  9. Add orange & lemon juices, stirring until incorporated.
  10. Boil until sauce is recuded to about 2 tablespoons.
  11. Stir in salt & cayenne pepper.
  12. Slice ckicken into thin strips, & place on top of kiwifruit.
  13. Top with sauce & serve.
