Ingredients:

  1. Combine seasoning mix in a small bowl and set aside.
  2. In a 4 quart heavy soup pot, combine 3/4 cup chicken broth with onions, celery, and bell peppers. Cook until vegetables are tender.
  3. Turn heat to high and stir in the gumbo file' powder, Tabasco sauce, garlic, and seasoning mix. Cook 6-8 minutes. stirring constantly.
  4. Reduce heat to medium and stir in tomato sauce; continue cooking 5 minutes. stirring constantly. During this time, the mixture will begin sticking to the bottom of the pan and smoke really bad, not to worry. Just keep stirring constantly.
  5. Add the 7 cups of chicken broth and bring to a boil.
  6. Add chicken and sausage. Reduce heat to a simmer, cover and simmer for 45 to 60 minutes, stirring occasionally.
  7. Serve gumbo over cooked white rice.
