Ingredients:

Directions:

  1. TO PREPARE RICE:
  2. Wash rice twice in cold water.
  3. Soak rice in 3 cups of water for 15 to 20minutes.
  4. Drain rice.
  5. In a medium pot with a lid,combine rice,3 1/4 cups of water,butter,salt,on high heat.
  6. As soon as the rice starts to boil vigorously,reduce the heat o low
  7. Cover and simmer for 18-2 0 minutes.
  8. Turn off the heat,but do not remove the lid.
  9. Allow rice to sit for about 5 minutes.remove lid,set aside.
  10. TO PREPARE CAULIFLOWER:
  11. In a separate frying pan or a wok,heat cumin seeds in oil,on medium-high heat.
  12. Once the seeds have sizzled about 30-45 seconds,reduce the heatand add onions and cloves.
  13. Saute the onion for 8-10 minutes till brown.
  14. Add turmeric,jalapeno,and salt,saute another 2 minutes.
  15. Add cauliflower,stir well,stir-fry for 5 minutes.
  16. Reduce the heatto medium-low,cover and cook for another 5=8 minutes,until cauliflower is cooked but still firm,not too soft.
  17. Add the cauliflower to rice and combine well.
  18. Add cilantro and stir with a large fork untill the rice is completely yellow from the turmeric.
