  1. Cream shortening in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add carrots, egg, vanilla, and orange extract; beat well.
  2. Combine flour, baking powder, and salt; add to creamed mixture, stirring well. Stir in raisins and pecans.
  3. Drop dough by heaping teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 350° for 12 to 15 minutes. Remove from cookie sheets, and cool on wire racks.
