Ingredients:
3/4 cup shortening |
3/4 cup sugar |
1 cup mashed, cooked carrots |
1 egg |
1 teaspoon vanilla extract |
3/4 teaspoon orange extract |
2 cups all-purpose flour |
2 teaspoons baking powder |
1/4 teaspoon salt |
1/2 cup raisins |
1/2 cup chopped pecans |
Directions:
1. Cream shortening in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add carrots, egg, vanilla, and orange extract; beat well. 2. Combine flour, baking powder, and salt; add to creamed mixture, stirring well. Stir in raisins and pecans. 3. Drop dough by heaping teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 350° for 12 to 15 minutes. Remove from cookie sheets, and cool on wire racks. |
