Ingredients:

  • crust
  • 1/4 cup powder sugar
  • 1/3 cup butter or margarine
  • filling
  • 2 eggs
  • 1 scant cup sugar
  • 1/4 cup lemon juice
  • 1/2 tsp baking powder
  • powdered sugar ,(optional)

Directions:

  1. Preheat oven to350.F
  2. Cover apricots with water. Simmer for 10 minutes. Drain.
  3. Mix together flour, 1cup powdered sugar. Cut in butter, making a crumbly mixture. Press into an 8 or 9 inch square pan.
  4. Bake for 20 minutes at 350.F
  5. In mixing bowl, Beat eggs until creamy. Beat in sugar, lemon juice and lemon rind.
  6. Combine flour and baking powder. Add to egg mixture.
  7. Chop apricots and fold into batter. Pour mixture over baked crust. Bake at 350.F for 25 minutes or until mixture is set. Remove pan from oven, cool. Cut into 24 bars.
  8. Dust with powdered sugar, if desired.
