Cajun Potato Salad

Ingredients:

  • 5 medium red potatoes
  • 6 cups water
  • 1 tbsp salt
  • 1 lb medium shrimp
  • 1 (2 oz) jar diced pimentos, drained
  • 1/2 cup mayonnaise
  • 1/2 tsp sugar

Directions:

  1. Place the potatoes in a large saucepan or Dutch oven;
  2. Add the water, seafood seasoning and salt. Bring to a boil.
  3. Reduce heat; cover and simmer for 25 minutes.
  4. Add the shrimp; cover and cook for 5 minutes or until shrimp turn pink and potatoes are tender.
  5. Drain.
  6. Peel and dice the potatoes.
  7. Peel and devein the shrimp, cut into pieces.
  8. In a large bowl, combine the potatoes, shrimp, onions and pimentos.
  9. In a small bowl, combine the mayonnaise, vinegar and sugar.
  10. Add to the potato mixture and gently toss to coat.
  11. Season with additional salt, if desired.
  12. Cover and refrigerate for at least 1 hour before serving.
