Ingredients:

Directions:

  1. Set oven to 350 degrees.
  2. Grease a 13 x 9 baking pan OR 11 x 7 pan.
  3. In a mixing bowl, cream butter and sugar.
  4. Add egg and extract, mix well.
  5. Combine the flour, orange peel, baking powder, and salt; gradually add to creamed mixture.
  6. Set aside one-third for topping.
  7. Press remaining dough lightly into a greased baking pan.
  8. Combine preserves, lemon juice and peel; spread evenly over crust.
  9. Sprinkle reserved dough over filling.
  10. Bake 40 minutes, or until golden brown.
  11. Cool on wire rack.
