Brown Sugar And Walnut Pear Muffins

Ingredients:

  • 1 & 1/2 cup. all purpose flour
  • 1/2 cup. brown sugar , packed
  • 2 & 1/4 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. salt
  • 1 medium pear, peeled and chopped finely
  • 1 egg
  • 1/2 cup. plain yogurt
  • 1/2 cup. vegetable oil
  • topping mixture
  • 3 to 4 tsp. finely chopped walnuts
  • 3 to 4 tsp. packed brown sugar

Directions:

  1. Sift first 6 ingredients together into a large bowl, rubbing the sugar through the sifter.
  2. Stir in chopped pear.
  3. Whisk together egg, yogurt, vanilla and oil.
  4. Stir into dry ingredients until just combined.
  5. Do not over mix.
  6. Fill greased muffin cups about 2/3 full.
  7. Mix topping ingredients together.
  8. Sprinkle topping mixture over each muffin.
  9. Bake for 20 to 25 minutes 350F, until lightly browned.
