Braised Lamb Chops French Onion Style

Ingredients:

Directions:

  1. Salt and pepper the lamb chops and brown in butter in a large frying pan.
  2. Remove chops from pan and cook the onion in the lamb drippings for 5minutes, add the carrot chunks.
  3. Mix the french onion soup powder with the cups of boiling water and add to the onion and carrots in the frying pan, simmer for 10minutes.
  4. While the soup mixture is simmering, in a bowl put the diced tomatoes, garlic, and soy sauce, mix well.
  5. Add the tomato mixture to the frying pan and combine well.
  6. Once combined, re-add the lamb chops to the pan, coat well with the mixture and bring to the boil - When boiling, lower to a simmer and cover.
  7. Simmer covered for an hour and a half to 2 hours or til fork-tender.
  8. Serve over mashed potatoes :-).
