Ingredients:

  • 2/3 cup shortening
  • 1 cup sugar
  • 3 eggs
  • 3 cups flour
  • 1 tsp salt
  • 1 cup buttermilk

Directions:

  1. Cream the shortening and sugar till fluffy. add eggs one at a time, beating well after each one is added.
  2. Sift together flour, baking powder and salt.
  3. To the egg mixture; alternate adding dry ingredients with the buttermilk.
  4. When well blended fold in blueberries.
  5. Fill muffin pan cups about 1/2 way.
  6. Bake 375 degrees F for 15 to 20 minutes.
