Spring is here! Woo Hoo! fresh blueberries. Ingredients:
2/3 cup shortening |
1 cup sugar |
3 eggs |
3 cups flour |
3 teaspoons baking powder |
1 teaspoon salt |
1 cup buttermilk |
10 ounces blueberries |
Directions:
1. cream the shortening and sugar till fluffy. add eggs one at a time, beating well after each one is added. 2. sift together flour, baking powder and salt. 3. to the egg mixture; alternate adding dry ingredients with the buttermilk. 4. when well blended fold in blueberries. 5. fill muffin pan cups about 1/2 way. 6. Bake 375 degrees F for 15 to 20 minutes. |
