Ingredients:

  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1 egg
  • 1 cup milk
  • 6 tbsp shortening

Directions:

  1. Sift dry ingredients. Combine egg, milk, shortening and add all at once to flour mixture. Stir until moist, but still lumpy. Fold in blueberries. Fill greased muffin pans. If using paper liners, spray them lightly with Pam and the muffins wil come out easily. Sprinkle with sugar. Bake at 400 degrees for 25 minutes. These make great mini muffins also.
