Blackberry Frozen Yogurt

Ingredients:

  • equipment needed
  • ice cream freezor
  • 1/3 cup water
  • 2 tbsp. lemon juice
  • 1 cup sugar or ( substitute equivalent to 1 cup )
  • 4 cups ( 32-oz ) edy's fat-free no sugar added frozen vanilla yogurt ( or any other brand )

Directions:

  1. In a food processor or blender, Add blackberries, water and lemon juice cover and puree. Strain blackberries, reserving juice and pulp. Discard seeds. Return to pureed blackberries to food processor or blender; add sugar or sugar substitute and vanilla. Cover and process until smooth.
  2. In a large bowl, combine yogurt and blackberry mixture. Fill cylinder of ice cream freezer two-thirds full; freeze according to the manufacturer's directions. Refrigerate remaining mixture until ready to freeze. When yogurt is frozen, transfer to a freezer container; freeze for 2 – 4 hours before serving.
  3. Serving size: 3/4 cup , Calories per serving: 189, Fat: 2g, Cholesterol: 7mg, Sodium: 80, Carbohydrate: 36g, Fiber: 3g, Protein: 6g
  4. Diabetic Friendly: only if having 1/2 of the serving size.
