Ingredients:

  • 1 cup plus 1 tbsp sugar, divided
  • 3/4 tsp salt, divided
  • 1/2 tsp lemon extract
  • 1-1/2 cups all-porpose flour
  • 1/4 tsp ground nutmeg
  • 2/3 cup milk

Directions:

  1. In a Dutch oven, combine the blackberries, 1 cup sugar, 1/4 teaspoon salt and lemon extract.
  2. Bring to a boil; reduce heat and simmer for 5 minutes.
  3. Meanwhile, in a mixing bowl, combine flour, baking powder, nutmeg and remaining sugar and salt.
  4. Add milk; stir just until mixed.
  5. (Dough will be very thick.)
  6. Drop by tablespoonfuls into six mounds onto hot blackberry mixture; cover tightly and simmer for 15 minutes or until a toothpick inserted in a dumpling comes out clean.
  7. Spoon into serving dishes.
  8. Serve with cream or whipped cream if desired.
  9. Yield: 6-8 servings.
